Ingredients:
Vegetable Oil
Olive Oil
Flour
Pepper/Salt
Zucchini (1 small for each serving/snack size or side dish)
Cover the bottom of a large skillet with 1/2 vegetable oil and 1/2 olive oil.
Cut zucchini into 1/2" thick strips/chunks.

Dust in salted/peppered flour.


Drop into hot skillet and cook briefly on each side until it starts to color.

The secret is to cook it like pasta - just to al dente! (I admit this is a bit too soft!)
